- 1 cup flour
- 1 cup sugar
- 1/4 teaspoon salt
- 2 cups cranberries (if frozen, allow to partially thaw)
- 1/2 cup chopped walnuts or pecans
- 1/2 cup unsalted butter, melted
- 2 eggs, beaten
- 1 teaspoon almond extract
Grease one 9" pie pan.
Combine flour, sugar, and salt. Stir in the cranberries and the walnuts and toss to coat. Stir in the butter, beaten eggs, and almond extract.
Evenly spread the batter in pie pan.
Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
