Side Dish Sunday: Easy Mushroom Risotto

Since there was much sturm & drang from the wingnuts over Mrs. Obama's visit to a homeless shelter that only serves healthy foods (like mushroom risotto), I thought I'd post this version... it's probably not the same recipe, but it certainly worked for our family growing up...

  • 2-3 tablespoons olive or vegetable oil
  • 1 small onion, finely chopped
  • 1 small carrot, chopped
  • 1 cup uncooked regular long-grain white rice
  • 1 can Cream of Mushroom Soup
  • 1 3/4 cups chicken stock or broth
  • 1/8 tsp. ground black pepper
  • 1/2 cup frozen peas

In a large skillet, heat oil then add onion, carrot and rice. Cook and stir until rice is browned. Add soup, broth and pepper. Bring to a boil. Cover and cook over low heat 15 min.

Add peas, then cover and cook another 5 minutes or until rice is done.

Smoky Bacon Cheddar Dip

  This recipe combines creamy cheese, smoky bacon, a hint of sweetness, and a touch of spice for a delicious and addictive dip. Speculators in the market have, rightly, been targeted for thier use of the Enron-loophole to basically compete (unfairly) in a market that is mixed between highly-regulated (see integrated oil companies) and unregulated players (see commodity brokers).
