Save a little money and serve these instead of the pre-packaged variety.
- 1/3 cup vegetable shortening
- 1/2 cup peanut butter
- 1/4 cup light brown sugar, packed
- 1 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 cup flour
- 1 teaspoon baking powder
- 1/3 teaspoon salt
- 1 1/3 cup oatmeal
Preheat over to 350 F.
Cream together shortening, peanut butter and sugars until light and fluffy. Add vanilla and eggs; beat well. Mix in flour, baking powder and salt, stirring only until blended. Stir in the oatmeal.
Spread evenly in greased 13x9 baking pan.
Bake for about 25 minutes or until golden brown. Cut into bars.
