Here's a simple recipe that serves 6. 8 slices bread (white or wheat) -- recommend using a thick sliced bread (like Texas Toast) or even hamburger buns 1 1/2 cups chopped chicken breast meat 2 tablespoons sour cream 1/4 cup chopped celery 1/4 cup diced carrots 1/4 cup chopped green pepper 1/4 cup cheddar cheese, shredded 1/4 cup monterey jack or pepper jack cheese, shredded 3 eggs, beaten 1 1/2 cups milk 1/8 teaspoon paprika Preheat oven to 350° F. Combine eggs & milk in a large bowl. Soak 4 slices of bread in the egg mixture, then arrange in the bottom of a well-greased 8" baking dish or casserole.
