Recipe Friday: Chicken Souffle Sandwich

Updated 3/22/2010:  I've added a few ingredients, taken out the extra salt and provided a picture. Sandwiches and left-overs go hand-in-hand -- especially when you need to feed a family. Here's a simple recipe that serves 6. 8 slices bread (white or wheat) -- recommend using a thick sliced bread (like Texas Toast) or even hamburger buns 1 1/2 cups chopped chicken breast meat 2 tablespoons sour cream 1/4 cup chopped celery 1/4 cup diced carrots 1/4 cup chopped green pepper 1/4 cup cheddar cheese, shredded 1/4 cup monterey jack or pepper jack cheese, shredded 3 eggs, beaten 1 1/2 cups milk 1/8 teaspoon paprika Preheat oven to 350° F. Combine eggs & milk in a large bowl.  Soak 4 slices of bread in the egg mixture, then arrange in the bottom of a well-greased 8" baking dish or casserole. And while it may not seem like I've been blogging much, I have been loading recipes into the publishing stream... and I'm going to start experimenting more with iPhone blogging and twitter streams.

Just Desserts: Peanut Butter Bars

Save a little money and serve these instead of the pre-packaged variety. 1/3 cup vegetable shortening 1/2 cup peanut butter 1/4 cup light brown sugar, packed 1 cup sugar 1 teaspoon vanilla 2 eggs 1 cup flour 1 teaspoon baking powder 1/3 teaspoon salt 1 1/3 cup oatmeal Preheat over to 350 F. Cream together shortening, peanut butter and sugars until light and fluffy. Add vanilla and eggs; beat well. Mix in flour, baking powder and salt, stirring only until blended. Stir in the oatmeal. Spread evenly in greased 13x9 baking pan. Bake for about 25 minutes or until golden brown. Cut into bars. Makes about 36. Budget Basics: Baking Mix

Prepared foods -- like mixes -- are great for convenience, but often wind up costing you more than you think. Here's a clone for the brand-name baking mix that will shave as much as half off the price. 8 cups all-purpose flour (or 4 cups each all-purpose flour and whole wheat flour) 2 tablespoons baking powder 1 tablespoon salt 2 teaspoons cream of tartar 1 teaspoon baking soda 2 cups dry nonfat milk 2 cups shortening Mix all dry ingredients together in large bowl (if you have a large mixer it is ideal to use for blending this mix but it can also be done quite adequately using a pastry blender to cut in shortening). Add shortening about a half cup at a time mixing well after each addition. Put in air-tight container and store either in refrigerator or at room temperature. Use within about 3 months. Blog Facelift

If you haven't been here in a while, you'll notice some changes -- I chose a new template (Thisaway Blue) which is a little easier to read and has a little wider space to post within. Archives are now at the bottom of the page... and if the bottom element allowed for two columns, that's where the FEEDJIT would be. New navigation element on the right: Recipe Lists. If you click on the category, it will take you to a posting with a list of recipe links that should make the older posts easier to find -- you can still get to them from Google or Blogger Search. That's not to say I won't be blogging politics, but with the passing of the torch to President Obama, the posts will probably be confined to GLBT politics or continued GOP asshattery.

Side Dish Sunday: Recap

Since I started this blog a little more than one year ago, I've posted over 100 recipes -- many of which came from my paternal grandmother's Glenwood Park United Methodist Church Cookbook (1968) compiled by their Methodist Women's Group. Having taken a break from posting (mostly) for the holidays, I'll be restarting the effort for 2009 this week. Same "Recipe Fridays", "Side Dish Sundays" and "Just Desserts" on Tuesdays -- but with a focus this year on "meal management". That's a course I took in college which, although considered a "fluff" senior course, really taught me how to plan and prepare food with an eye to budget and nutrition.
