This week: Apple Cake
- 4 cups peeled & chopped apples
- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla
Grease & flour one 9x13 baking pan.
Beat eggs and oil until foamy. Set aside.
Sift dry ingredient together, then add egg mixture and vanilla. Beat until smooth. Fold apples into batter. Spread in baking pan.
Bake for 45-50 minutes.
Serve warm with vanilla ice cream.
Topping variation:
- 6 oz. of cream cheese
- 2 tablespoons melted butter
- 1 teaspoon vanilla
- 1 1/2 cups powdered sugar.
