This week: Spinach noodles in sour cream
- 1 egg
- 4 cups spinach noodles
- 1/2 cup grated parmesan cheese
- 1 cup non-fat sour cream
Prepare spinach noodles according to package directions. Drain well.
In a large mixing bowl, beat egg then add in sour cream and parmesan cheese. Fold in cooked noodles. Keep warm over double boiler until ready to serve. (Serves 4)
