- 1 1/4 cup sugar
- 1 tablespoon dark molasses
- 1/2 cup creamy peanut buter
- 1/4 cup shortening
- 1/4 cup butter, softened
- 1 egg
- 1 1/4 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Cover & refrigerate until firm.
Preheat oven to 375F.
Roll dough into 1 1/4" balls. Place on parchment-lined cookie sheet -- about 3 inches apart. Flatten in criss-cross pattern with a fork.
Bake 9-10 minutes or until light golden brown. Allow to cool before removing from the cookie sheet.
