PostHeaderIcon Recipe Friday: Wild Rice and Shrimp Casserole

  • 1 can cream of mushroom soup
  • 2 tablespoons chopped white or yellow onion
  • 2 tablespoons unsalted butter, melted
  • 2 cups cooked wild rice
  • 1/4 teaspoon black pepper
  • 1/2 pound uncooked shrimp
  • 2 tablespoons chopped green pepper
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon worcestershire sauce
  • 1/4 cup cubed cheddar cheese
Preheat oven to 350°F.

In a large bowl, mix all ingredients together.  Pour into a greased 1 1/2 quart casserole dish.

Bake for 30-35 minutes.
