PostHeaderIcon Recipe Friday: Porcupines

  • 3 lbs. ground beef
  • 1 1/2 cup rice (raw & uncooked)
  • 1 green pepper, chopped
  • 3 medium onions, chopped
  • 1 teaspoon black pepper
  • 1 tomato chopped
  • 1 can tomato soup (low sodium)

Preheat oven to 350°F.

Mix meat, rice, onion, green pepper, and pepper and form into 6 balls. Place into a casserole or baking dish.

Mix and chopped tomato and pour over the meatballs.

Bake for 1 1/2 hours.
