PostHeaderIcon Side Dish Sunday: Duchess Potatoes

  • 2 cups hot mashed potatoes
  • 2 tablespoons butter, divided
  • 1 beaten egg yolk
  • salt & pepper
Preheat oven to 450F.

To the potatoes add 1 tablespoon butter, egg yolk, salt & pepper to taste.  Using a serving spoon, push mounds of potato mixture onto parchment-lined baking sheet.  Melt remaining butter and drizzle across potatoes.

Bake for 10-12 minutes.
