PostHeaderIcon Just Desserts: Easy Apple Coffee Cake

For the cake
  • 2 cups baking mix
  • 2/3 cup of milk
  • 2 tablespoons sugar
  • 1 egg
  • 1 tart green apple, cored, peeled & sliced
For the topping
  • 1/3 cup baking mix
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons butter (diced & kept chilled)

Preheat oven to 400°F.

Grease 8" square pan or 9" round pan. In a mixing bowl, beat baking mix, milk, egg and sugar until smooth. Spread the batter in pan and insert the apple slices evenly throughout around the cake.

In a small bowl, mix the topping ingredients with a fork. Spread over top of cake. Add butter dabs evenly over the top.

Bake for about 20 minutes or until golden brown, testing with a toothpick.
