Just Desserts: Oreo Cookies & Cream Freeze

  • 4 squares semi-sweet bakers chocolate
  • 14 Oreo Cookies, divided
  • 1 package (8 oz.) Cream Cheese, softened
  • 1/4 cup sugar 1/2 tsp. vanilla
  • 1 tub (8 oz.) Whipped Topping, thawed

Line an 8 1/2" loaf pan with the ends of the foil extending over the sides by at least an inch. Arrange 8 of the cookies evenly on bottom of pan. Crumble remaining 6 cookies and set aside.

Melt chocolate as directed on package and set aside until ready to use.

Beat cream cheese, sugar and vanilla in medium bowl until well blended. Stir in whipped topping. Remove about 1-1/2 cups of the cream cheese mixture; place in medium bowl. Stir in melted chocolate.

Spread the remaining cream cheese mixture over cookies in pan and sprinkle with crumbled cookies. Press the cookie crumbles into cream cheese mixture with back of spoon. Top with the chocolate cream cheese mixture. Cover. Freeze 3 hours or until firm.

Remove from freezer about 15 minutes before serving and invert onto a serving plate. Peel off foil. Let stand at room temperature to soften slightly before cutting to serve.

Old Fashioned Mint Candies

  Ingredients 4 oz cream cheese¹ softened (113g) 1 Tablespoon salted butter softened 4 cups powdered sugar plus additional as needed and for imprinting mints (500g) ½ teaspoon peppermint extract ⅛ teaspoon vanilla extract Food coloring optional Instructions Combine cream cheese and butter in the bowl of a stand mixer (or in a large bowl and use an electric mixer) and beat until creamy and well-combined. With mixer on low-speed, gradually add 2 cups (250g) of sugar, stirring until completely incorporated. Add peppermint and vanilla extract and stir well.
