This week: South St. Louis Butter Cake

For the bottom layer --
  • 2 1/4 cups all purpose flour
  • 1 1/3 cups sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter (softened)
  • 1 cup low-fat milk
  • 1 teaspoon vanilla
  • 2 eggs

Combine dry ingredients in mixer bowl. Add butter, milk and vanilla. Mix well. Add eggs and mix on high for about 2 minutes.

Pour into well-greased & floured 13x9 pan.

For the top layer --

  • 8 oz. cream cheese, softened to room temperature
  • 2 cups powdered sugar
  • 2 beaten eggs

Combine cream cheese, sugar and eggs and mix well. Spread over top layer and sprinkle with additional powdered sugar.

Bake 40-45 minutes at 350°F. Top is golden brown and edges dark brown when done.
