For this week's recipe, I'm going with a basic meatloaf recipe that can be used as a reference for a whole thread on meatloaf variations -- including other mixers and toppings.
For this week's recipe, I'm going with a basic meatloaf recipe that can be used as a reference for a whole thread on meatloaf variations -- including other mixers and toppings.
- 2 lbs extra-lean ground beef
- 2 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup finely chopped onion
- 2 eggs, lightly beaten
- 1 cup quick-cooking oats (some people use bread crumbs -- if so, up it by 1/2 cup)
Preheat oven to 375 F.
Combine all ingredients in a large bowl and mix well. Knead mixture into a loaf and shape in a 13x9 baking pan.
Topping:
- 2/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 4 strips uncooked bacon
Mix ketchup, brown sugar and mustard until well blended. Spread evenly over the meat loaf, then lay the bacon strip lengthwise across the top.
Cover pan with foil and bake for about 1 hour.
